Local tea
I’ll be demonstrating how to make local tea from wild plants: raspberry, mulberry, fireweed, goldenrod, cherry, spirea, etc… yes yes, tea! Caffeine-free, but with the same soothing (if different) taste as Wulong and black teas. Come and discover the fascinating world of oxidation, which transforms herbal tea into tea, and which I’m the only one to sell in Quebec… it’s my specialty! We’ll taste several of my batches and roll the leaves together. For more details, visit my page on teas.
Transfo: lacto-fermentations
Want to preserve your vegetables this fall? Come and learn how to make your own sauerkraut, kimchi, pickles, etc. I’ll share with you my thousand and one variations, techniques, instruments and fermentation conditions. You’ll be able to sample many of my creations, but above all my boundless passion for this age-old art form!
Transfo: canning, freezing and maceration
As a food processor, I’ll be sharing with you the many preservation techniques I’ve experimented with over the last few years that will help you transform your own vegetables and herbs this autumn into tasty condiments.
Wild harvesting
You’ll discover the bounty of wild nature, what, when and how to harvest plants for food, medicine, clothing, construction, etc.: plant identification, harvesting tools, responsible harvesting, toxic plants, etc.
Seed saving
Come and discover the fascinating world of seeds! How to collect your own seeds, then share and sow them: botanical family, varieties, spacing, genetics, isolation and hybridization techniques, cleaning, conservation, etc.
Starting and maintaining the vegetable garden
Come and visit my vegetable garden to learn about the basics of gardening: soil, fertilization, sowing, transplanting, mulching, irrigation, staking, weeding, harvesting, insects/diseases, etc. And how to start a garden from a wild meadow.
Transfo: fermentations
We’ll look at the different kinds of fermentations (other than lacto), such as yogurt, milk kefir, water kefir, kombucha, alcohol, vinegar, miso, amazake, cheese, etc… this infinite world will enchant your taste buds and inspire your creativity to make them in your kitchen.
